Our retail bakery accepts same-day orders via phone calls (if we are able to) and via walk-in, first come first served. All online orders are for future date pick-up only (bread, bagels, cupcakes, and holiday specials). 

BREADS

ARE YOUR BREADS CERTIFIED GLUTEN-FREE?
Yes! We are certified gluten-free through the Gluten-Free Food Program (GFFP)GFFP gluten-free certification provides standards and best practices recognized by the gluten-free community to help manufacturers address the prevention and control of gluten cross-contamination and help augment existing gluten-free production procedures. Implementation of GFFP gluten-free certification standards increases consumer confidence that manufacturing procedures have been reviewed by a neutral party and demonstrates legitimacy of the manufacturer’s gluten-free processes.

GFFP gluten-free certification further requires that all products certified in the program meet the strictest industry requirement of 5 ppm (parts-per-million) or less, as established by the National Celiac Association. This promotes the highest safety standard, confidence and brand loyalty amongst the celiac community and those who require gluten-free products for other health reasons. 

ARE YOUR BREADS NON-GMO?
Yes! All of our breads are free from GMO's (genetically modified organisms). We understand the importance of real food with wholesome, clean ingredients and strive to source the best possible natural and organic ingredients for you and your family.

I SEE YOU USE XANTHAN GUM. WHAT IS THE SOURCE?
The xanthan gum we use is derived from non-GMO corn. It is produced from simple sugars using a fermentation process. Products made by fermentation, such as gums, are not composed of the source nutrients (in this case, corn). These are metabolized during fermentation. After the fermentation step, the gums are recovered, purified, dried, milled, and ready for use.

WHAT IS CULTURED DEXTROSE? HOW MUCH IS IN YOUR BREAD?
0.35%, per 1000g of dough, a teeny tiny amount. Cultured dextrose is a natural shelf-life extender produced via a unique controlled fermentation of dextrose(sugar) with Propionibacterium freudenreichii. It is an all-natural off-white powder containing short-chain organic acids and other natural fermentation-derived metabolites that can extend the shelf life and enhance the flavor profile in a variety of applications. Cultured Dextrose has been used to extend shelf life in baked goods, cheeses, meats, salad dressings, condiments, dips, spreads, and more. By preventing the growth of unwanted bacteria, yeasts, and molds, cultured dextrose can replace chemical preservative like sorbate and benzoates for a clean label alternative.

WHAT IS NATURALLY LEAVENED?
Most bread that is sold at grocery stores use the same variety of commercial baker’s yeast that consumers can purchase in the store when baking their own bread at home.  However, for most of human history this is not how bread has been made. For eons, bakers would take flour and water (to create what we will call a starter) then they would mix and wait.

After a period, the starter would begin to bubble and emanate a slightly sour smell.  This activity was fermentation; the result of the yeast and other microorganisms, found naturally in the grains, that were milled into flour. The bakers would then add more flour, some salt and perhaps other ingredients and bake the dough. The basic concept of natural fermentation has been used for much of human history to prepare everything from bread and beer to yogurt and pickles. This traditional process was used around the world in just about every culture.
Most of our breads at New Cascadia Traditional are also naturally leavened.  We believe naturally leavened breads have superior taste, and a depth and character that can only be achieved by using this ancient process. This is especially true of our breads because we use whole grains such as millet, sorghum, brown rice and teff.

ARE ANY OF YOUR BREADS YEAST-FREE?
First, please read our explanation of ‘What is Naturally Leavened’?
Our naturally leavened breads do not have any added commercial baker’s yeast. However, we use a natural starter which contains cultivated, naturally occurring organisms, including yeast that is inherent in the grains we use in our breads.

Our breads are sold at grocery stores, co-ops, and markets all over the Portland Metro & Willamette Valley area. Please reference our stockists list to find a location near you. If you'd like to order your bread and pick it up locally, you can do that right here on this website. Please note that all orders placed on this website are strictly for local pick-up at our cafe.

HOW SHOULD I STORE & HANDLE MY BREAD?
All of our bread and bagel products are best enjoyed by the "use by/freeze by" date on the package. However, you can extend the shelf life of our products by storing them in the refrigerator in an airtight container. Our products also freeze well. Please slice bread and bagels before freezing, thaw on counter at room temperature, and toast or warm before eating*. Here's a handy reference for you.
*Our breads have a higher moisture content than common bread. This, combined with the fact that gluten-free flour mixtures oxidize under heat in a slower manner, dictates toasting times will be longer that normal.

 

BAKERY

WHAT ALLERGENS ARE PRESENT AT YOUR BAKERY?
All of us at New Cascadia Traditional take your health and wellness very seriously. All of our bread products carry the Certified Gluten-Free designation and are free of GMOs. Pastry, bakery menu items, and holiday dessert items do not. You can rest assured knowing that those products ARE made in a dedicated gluten-free facility with ingredients that are thoroughly vetted GF safe. We make it a priority to support local growers and suppliers, and make every effort to buy non-GMO, organic, wholesome ingredients for all of our products outside of our bread line. We take precautions to eliminate cross-contamination with other ingredients that are also present at our retail bakery: eggs, dairy, soy, peanuts, sesame, meat, and tree nuts. All items at our retail bakery are labeled with any common allergen that they contain (if any), and we have an updated ingredients list at the counter for our customers to review, upon request. If you have any questions, please ask one of our staff. We're more than happy to help.

IS YOUR BAKERY VEGAN FRIENDLY?
Yes! We offer an array of dairy and egg free options and the majority of our breads are vegan. 

CAN I PLACE A SPECIAL ORDER FOR A FUTURE DATE?
We are currently accepting special orders for bread, bagel, and cupcake items only, for future date pick ups. All special orders should be placed on our website with a minimum of 96 hour notice. We require payment in advance and arrange for pick-up at the time of order.

Special orders require four day notice and payment in full. Item availability is subject to change, and we may need to close orders earlier than four days during busy times or before major holidays. If you need to cancel an order, we require a minimum 24 hours notice. Please e-mail shop@newcascadiatraditional.com to cancel.

CAN YOU HOLD AN ITEM FOR ME?
Yes, for same day pick up only. Full payment is required at time of order placement.

WHAT IS PARKING LIKE AT YOUR BAKERY?
While we don't have a parking lot, there is parking available on Division street and residential areas.

WHEN IS THE BAKERY OPEN?
Our bakery is open Sunday, Tuesday, Wednesday from 8am-2pm. We are open Thursday, Friday, Saturday from 8am-8pm. We are open Sunday from 8am-2pm. We are closed on Mondays. Holiday Week Hours may vary**

WHAT IS YOUR REFUND POLICY?
ONLINE ORDERS: we require a minimum 24 hours notice to cancel an online order. Online orders canceled with 24 hours (or more) notice will receive a full refund. Online orders canceled with less than 24-hours’ notice will receive a 50% refund. If an online order is not picked up and notice of cancellation is not given, the purchase price will not be refunded. Same day sale phone call orders that are not picked up will not be refunded.
