The art of making bread is ancient and simple: flour, water, salt. As gluten-free bakers, we're forging a new path (and have been since 2007) for gluten-free bread. Simple ingredients, naturally fermented starters, whole grains, and hand crafted with intention and respect for the art of bread making.

Our breads retain the characteristics that are the hallmark of traditional, Old World, artisan baking methods (color, crust, crumb, mouth-feel, shape, etc.), while replacing common gluten-containing ingredients with high quality, allergy-safe alternatives. Unlike our competitors, our products are never frozen, use no preservatives, artificial coloring or flavors, or dough conditioners. Only our Challlah & Soft Rolls contain organic eggs, whereas many of our competitors use egg as a main ingredient in all of their breads making them unsuitable for those with egg sensitivities.

 

 RUSTIC ITALIAN

Our Rustic Italian is based on the classic Italian Pugliese hearth bread characterized by a moist dough which results in large holes in a well-structured crumb, and a well-developed, crunchy crust. You can enjoy a loaf of Rustic Italian as garlic bread with your favorite pasta dish, tear it up and serve as a shared table bread with salted olive oil and vinegar for dipping, or just dive right into the loaf itself.

FARM HOUSE SANDWICH BREAD

Although it was introduced a little over a year ago, our Farmhouse Sandwich Bread has become a flagship worthy product. We sell more of this bread than any other. And for good reason: it's incredible! It has an open, tender crumb and airy texture that belies the fact that this sandwich bread is made with mostly whole grains. The natural leavening emphasizes the inherent flavor of each grain and gives it a subtle, overall tang that makes garlic butter or even a peanut butter and jelly sandwich sing.

Our Seeded sandwich bread was the very first bread we produced at New Cascadia Traditional in 2007 and it has remained a favorite over the years. It has evolved from a dense, German Vollkornbrot bread to its latest incarnation as a flavorful whole grain sandwich bread. We begin with a millet sourdough starter that enhances the flavors of the whole grain teff and brown rice flour. To that we add an assortment of seeds: pumpkin, sunflower, poppy, flax and sesame. The final result is a hearty, flavorful, nutrition rich sandwich bread. Pile on the toppings for a full sized sandwich or simply shmear on some fresh goat cheese and top with some sliced apples. This bread can handle it all.
