Our Seeded sandwich bread was the very first bread we produced at New Cascadia Traditional in 2007 and it has remained a favorite over the years. It has evolved from a dense, German Vollkornbrot bread to its latest incarnation as a flavorful whole grain sandwich bread. We begin with a millet sourdough starter that enhances the flavors of the whole grain teff and brown rice flour. To that we add an assortment of seeds: pumpkin, sunflower, poppy, and flax. The final result is a hearty, flavorful, nutrition rich sandwich bread. Pile on the toppings for a full sized sandwich or simply shmear on some fresh goat cheese and top with some sliced apples. This bread can handle it all.
INGREDIENTS: Water, natural starter (millet flour, water), whole grain teff flour, tapioca flour, seeds (sunflower, pumpkin, poppy, flax), ground flax seed, whole grain brown rice flour, xanthan gum, sea salt, yeast.
